North American wild elderberry, Sambucus canadensis, is a versatile plant. Its flowers are aromatic and pretty and can make a refreshing beverage. Its berries can be processed fresh, frozen or concentrated in a beverage form, syrups and jellies. It can be mixed with other fruit beverages and blends well. In addition to its nutritional value, elderberry has medicinal value. Elderberry is high in antioxidant, reacting with and negating the effect of free radicals that we are exposed to in our environment. Elderberry is high in bioflavonoids which enhance effectiveness of vitamin C and others. Elderberry syrup is a natural cold and cough remedy found on store and pharmacy shelves.
Elderberry is reasonably simple to manage in the garden. Elderberry propagates by root division, soft and hard wood cuttings, seed and tissue culture.
